Pacific Rim Chicken Burgers

Ingredients

  • 1 1/4 pounds ground chicken
  • 1 egg lightly beaten
  • 2/3 cup panko (Japanese bread crumbs)
  • 1 clove garlic, minced
  • 2 green onions, thinly sliced
  • 1 tsp salt
  • 3 tbsp chopped cilantro
  • 1 tsp Asian hot chile sauce
  • 1 tbsp vegetable oil
  • 1 tsp honey
  • 1/2 cup bottled teriyaki glaze
  • 4 sesame buns, split and toasted
  • 4 leaves red lettuce
  • 1 cucumber, peeled, seeded, halved, and thinly sliced length-wise
  • Ginger mayonnaise, recipe follows

Recipe Notes

  1. In a large bowl, mix together chicken, panko, egg, onions, cliantro, garlic, chili sauce, and salt
  2. With oiled hands, form into four patties
  3. In a small bowl, mix together teriyaki glaze and honey
  4. In large nonstick frying pan over medium-high heat, place oil
  5. Add chicken and cook, turning and brushing teriyaki glaze, about 10 minutes or until done
  6. Place burgers on toasted buns and top with lettuce, cucumber, and ginger mayonnaise
  7. Garnish with additional cliantro and cucumber slices

Makes 4 sevings

Note: Regular bread crumbs may be used instead of panko. Cakes may be made smaller or size desired. Grilling burgers is possible.

Ginger Mayonnaise Directions

  1. In small bowl, mix together 1/2 cup mayonnaise, 2 teaspoons sweet pickle relish, 2 tsp minced fresh ginger, 2 tsp lime juice, 1 clove garlic, minced at 1/4 tsp salt.
