Zucchini Bread

Ingredients

  • 3 cups flour (wheat flour is suggested but any type works)
  • 2 tsp baking soda
  • 1/2 cup baking powder
  • 1 cup packed brown sugar
  • 1-2 tsp cinnamon
  • 1/2 tsp nutmeg (optional)
  • 1/2 cup vegetable oil
  • 3/4 cup apple sauce
  • 3 eggs
  • 1 tbsp vanilla
  • 2 cups grated zucchini
  • 1 cup nuts (optional)

Recipe Notes

  1. Preheat oven to 350 degrees
  2. Mix together oil and sugar
  3. Add eggs and vanilla and mix well
  4. Mix dry ingredients and then add to the wet mixture
  5. Lastly, add zucchini and nuts, mix well
  6. Place into two bread pans or one 9×13 dish and bake for 30-45 minutes
