This is an opportunity for you to stimulate their minds, trigger their memories, and foster conversation, sharing, and a stronger bond. This is especially true when you prepare meals that are nostalgic or that remind your parent of other special times in their lives.

This recipe is for a delicious and unexpected twist on the classic potato latke. Traditionally eaten during certain Jewish holidays, latkes are also seen in other cultural cuisines. The classic recipe calls for simple white potatoes, but this version shakes things up by using sweet potatoes and bumping up the nutrition with zucchini. This allows you to enjoy the familiarity of the meal while also getting something slightly different as well as even more nutrition.

What You Will Need

  • 4 tablespoons of olive oil
  • 2 cups of grated, but unpeeled zucchini
  • 1/2 of a cup of parsley
  • 2 cups of peeled and grated sweet potato
  • 1/2 of an onion
  • 3 eggs
  • 1 tablespoon of corn flakes
  • 4 tablespoons of flour
  • Ground black pepper
  • 1/2 of a teaspoon of salt
  • A large bowl
  • A mixing spoon
  • A large non-stick pan
  • A spatula
  • A sharp knife
  • A cutting board
  • Paper towels

What to Do

  • Use the sharp knife to chop the parsley coarsely and set aside
  • Grate the zucchini, taking care not to peel it
  • Peel and grate the sweet potato and set aside
  • Cut the onion in half, reserving one half for later use, and chopping the other half as evenly as possible
  • In the large bowl, add the corn flakes
  • Cover the corn flakes with plastic wrap, but just over the flakes, not the bowl
  • Crush the flakes with your hands until there are just crumbs left
  • Add the zucchini, parsley, sweet potato, eggs, onion, salt, pepper and flour to the large bowl
  • Use the mixing spoon to mix them together
  • Place the large nonstick pan over high heat
  • Add the oil to the pan
  • Allow the pan to heat up, testing the oil by dropping a droplet water in it
  • Once the pan and oil are heated enough, carefully place tablespoons of batter into the pan, keeping them separate
  • Allow the batter to fry in the pan
  • When it has become crisp on the bottom, use the spatula to flip the latkes
  • As needed, add oil to the pan as the frying continues and oil soaks into the latkes
  • When a latke has finished frying, remove it from the pan and place it on the paper towels to absorb the excess oil
  • Continue frying and adding more batter to create more latkes, until all the batter has been used
  • Allow the latkes to dry and the oil to soak off onto the paper towel before plating the latkes and discarding the paper towels
  • Serve still hot as a side dish to a main meal, or as a snack on its own
